Greener Pastures Launches New Local Beef Program!
When Greener Pastures Ranch purchased the local 4-H Bar Cattle Company Scholarship calves in November, it was part of Tim Jenkins’ vision for a local beef company to offer hand-selected all-natural beef.
Since then, the scholarship calves and other hand-selected local cattle have been growing under watchful eyes. Following the daily feed consumption and weight gains of these calves has reinforced Jenkins’ hunch that these mountain-raised calves are top producers. “These cattle are extremely healthy and content. As a result they really outperform typical commodity cattle.”
Growing in a calm and stress-free environment means there is no need for added hormones or antibiotics. The calves are raised chemical-free in order to offer a wholesome all-natural product with hearty taste and delectable tenderness.
With the process of producing the beef well underway, Greener Pastures Ranch has launched its All-Natural Colorado-Grown Beef program to offer the beef for sale locally. Winter Carnival-goers saw the local CattleWomen serving steaming hot samples of Greener Pastures Ranch Beef to parade-watchers as they tried to warm up on that cold winter day.
The company markets its beef online at the company’s website. All-natural Colorado grown beef will be available in bulk amounts of an eighth, quarter, half or whole beef. Quantities are limited and beef orders will be filled in June and September with beef conveniently delivered to customer’s homes ready for the freezer.

Sven Wiik’s Favorite Burgers
Amazingly tasty, even kid approved
1 lb. lean ground beef
1 egg
1/2 - 2/3 cup consommé
1 1/2 tsp. salt
º tsp. white pepper
1 T. onion, chopped
2/3 cup mashed potatoes
1/2 cup diced picked red beets
3 T. juice from beets

Sauté the onions. In a mixing bowl, combine ground beef, egg, mashed potatoes, consommé a little at a time. Add beets, beet juice white pepper and sautéed onions and mix well. Form mixture like thick hamburgers and grill. This dish is traditionally served with baked sliced, finely cut potatoes. Serves 6.
Summertime Steak Rub
2 T. paprika
2 T. chili powder
1 T. sea salt
1 1/2 T. ground cumin
1 tsp. dry mustard
2 T. curry powder
2 tsp. ground pepper
2 T. brown sugar
1/2 tsp. cayenne
Mix all ingredients. Put over steak to form a crust. If you have a smoker, lightly smoke meat for 1/2 to 1 hour and finish on grill.
